Monascin is a yellow azaphilone pigment produced by Monascus species, the mould used to prepare red yeast rice. Its formula is C21H26O5 and its molecular weight is 358.43, and it is supplied as a solid. Food-analysis and natural-product laboratories use it as a reference standard when characterising Monascus fermentation products, in which a family of related pigments must be separated and identified. It supports method development for HPLC or LC-MS determination of pigment content in red yeast rice preparations and dietary ingredients, and it allows retention times and response factors to be checked against an authenticated standard.
